ABOUT THE CHEF

The daughter of a Polish painter/musician and Ukrainian elementary teacher, Chef Mari Rozyn (originally Maria Rozynska) grew up amid great food and music. After studying Education abroad led her to teach History and English to people from all parts of the world, Mari rediscovered the joys of home cooking & the stories behind them. That's why since 2010, she's been sharing generations of recipes and forgotten cooking methods while singing songs from the homeland, hosting numerous adult and kids cultural cooking and music events with Toronto's finest chefs & musicians. Her goal has always been the same; Get as many people around the table as possible, for good food and good music to feed our soul.

Salted Fish with Apples, Onions & Eggs on Toasted Vinegar Rye Bread

  • 160g          Sprats in oil
  • 180ml       Apple Cider Vinegar
  • 500g         Organic Dark Rye Loaf (about 10 slices)
  • 1                 Sweet & Sour Apple
  • 1                 Yellow Onion
  • 2                Hard-Boiled Eggs
  • 1                 Green Onion

BIGOS:

Smokey Meat and Sour Sauerkraut Stew with a hint of Prunes and Spices

  • 1/2 lb         Kielbasa (Polish Sausage)
  • ½ lb           Pork
  • ½ lb           Stewing Beef
  • ½ lb           Smoked Bacon
  • 750ml        Sauerkraut
  • 225g           Sliced Button Mushrooms
  • 1                  Yellow Onion
  • 180g           Shredded Cabbage
  • 60ml          Vegetable Demi-Glace
  • 6oz              Tomato Paste
  • 100g            Pitted Dried Prunes
  • 2                  Bay Leaves
